UI Cancer Center cookbook is available
IOWA CITY, Iowa -- The University of Iowa Cancer Center brings healthy living
and cancer prevention into the kitchen. The Colorful Plate Cookbook is a project
developed by the Cancer Information Service, featuring a variety of recipes,
food options and guidelines for creating a well-balanced diet that may help
in reducing cancer risk.
Maintaining a healthy diet is an important step toward cancer prevention
and overall wellness. The appetizers, entrees, desserts and children's dishes
listed in the cookbook include nutritional information and adhere to current
dietary recommendations from the National Cancer Institute, U.S Department
of Agriculture and the U.S. Department of Health and Human Services.
The Colorful Plate Cookbook also includes tips for staying active, gaining
and losing pounds safely, exercise, and the importance of variety in meals.
Coordinators of the cookbook hope that it serves as a good resource for everyday
cooking, special events and general health awareness.
"Our educational cookbook provides detailed information and teaches
readers how to modify eating habits and recipes for a more healthy lifestyle,"
said Joan Felkner, an information specialist at the Cancer Information Service.
"Part of the Cancer Center's mission is to share our knowledge and expertise
with Iowans through educational outreach programs. This is one example of
our commitment to providing Iowans with information that can promote a healthy
The recipes were selected from UI Cancer Center staff, volunteers and other
cooking manuals. A blend of family favorites, original creations and timeless
dishes run through the pages of the book. Some selections are modified for
a low-fat, high fiber diet, so readers can choose to prepare healthier versions
of Chinese Egg Rolls, Vegetable Lasagna and Cherry Delicious Pie.
